...Oh, I never realized Siri could dictate?...and as for even the Irish making, it work... ah well, we just figured out abacuses......so we were gonna have to get our minds around technology at some stage.

Mark, in iOS you should be able to "speak" anywhere you'd type (from the onscreen keyboard). You should have a microphone key (icon) on the screen when you see the keyboard.  I believe this is separate from Siri. "Hey Siri" accepts input mostly to Apple features such as Notes, or Reminders, but you can't say, "Hey Siri, add a note to Evernote."  

You could however say, "Hey Siri... Add a note..." (she'll ask what you want the note to say) "Check oil level in circ pump 3A" will create a note (in your iOS Notepad) that says (roughly) that. iOS voice input struggles a bit with some of our syntax, though.

In Evernote, you should see this:
